Cell regenerations - is a process of birth, living, decay and demise - though as a whole the Hydra does not die - because its cells die on its behalf and get regenerated.

But living an immortal like Hydra is not a virtue - because Humans and Hydras - will still have to face calamity like Earth explode, comet collision, earthquake, volcano, tsunami --- where no matter how cell regenerate ---- Humans and Hydra will not be liveable ---- due to the demise of 4 Great Elements (matter, air, water, temperatures).
That is, if 4 Great Elements of Earth demise - immortality like Hydras also cannot survive.
